Description

This CrockPot Chicken Tortellini is a creamy, cheesy, and comforting one-pot meal perfect for busy weeknights. Tender chicken breasts simmer slowly in a flavorful marinara and broth base before being finished with cheese tortellini, spinach, and melty mozzarella for a restaurant-style meal made right at home.


Ingredients

  • Olive oil spray
  • 1 ½ lbs chicken breast (about 4 medium breasts)
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion granules
  • 1 teaspoon Italian seasoning mix
  • ½ teaspoon paprika
  • ¼ teaspoon red chili flakes
  • 1 ½ cups chicken broth
  • 1 lb cheese tortellini (fresh or frozen)
  • 1 cup mozzarella cheese, shredded
  • ½ cup heavy cream
  • 2 cups baby spinach
  • ⅓ cup Parmesan cheese, grated


Instructions

  1. Lightly spray the inside of your slow cooker with olive oil spray.
  2. Place the chicken breasts in the bottom and season with garlic powder, onion granules, Italian seasoning, paprika, and red chili flakes.
  3. Pour the marinara sauce and chicken broth over the chicken.
  4. Cover and cook on Low for 5–6 hours or High for 3 hours, until the chicken is tender and fully cooked.
  5. Remove the chicken and shred it using two forks.
  6. Return shredded chicken to the crockpot, then stir in the heavy cream, tortellini, mozzarella, and baby spinach.
  7. Cover and cook for another 20–25 minutes on Low, until tortellini are tender and the cheese has melted.
  8. Sprinkle Parmesan cheese before serving and enjoy warm.

Notes

  • For extra creaminess, add more heavy cream or mozzarella.
  • Use frozen tortellini without thawing — just add 5–10 extra minutes of cooking time.
