Description

Decadent Creamy Alfredo Lasagna Soup is a comforting twist on classic lasagna, combining creamy Alfredo flavors with tender noodles, shredded chicken, and cheesy goodness—perfect for a cozy weeknight dinner.

Ingredients

  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups half-and-half or whole milk
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon ground nutmeg
  • 2 cups shredded cooked chicken (rotisserie works well)
  • 8 lasagna noodles, broken into bite-sized pieces (or use any short pasta)
  • 1 1/2 cups grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh parsley or basil, chopped (for garnish)
  • Toasted bread or croutons for serving

Instructions

  1. Melt butter in a large pot over medium heat. Add garlic and onion, sauté until fragrant and translucent.
  2. Stir in flour and cook 1–2 minutes to create a roux.
  3. Gradually whisk in chicken broth, half-and-half, and heavy cream. Stir until smooth.
  4. Add Italian seasoning, nutmeg, salt, and pepper. Bring to a gentle simmer.
  5. Stir in shredded chicken and broken lasagna noodles. Cook until noodles are tender, about 10–12 minutes.
  6. Add Parmesan and mozzarella cheese. Stir until melted and creamy.
  7. Serve hot, garnished with fresh parsley or basil. Accompany with toasted bread or croutons.

Notes

  • Use rotisserie chicken for a quick shortcut.
  • Adjust cream and cheese to reach your preferred richness.
  • Leftovers reheat well in the microwave or on the stovetop.
