Description

This creamy shrimp tortellini with lemon garlic sauce is a quick, restaurant-quality dinner you can make at home in under 30 minutes. Tender shrimp and cheese tortellini are tossed in a zesty garlic cream sauce thatโ€™s bursting with flavor.


Ingredients

  • 12 oz cheese tortellini
  • 8 oz shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Cook tortellini according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and sautรฉ until pink and cooked through (about 3 minutes). Remove shrimp and set aside.
  3. In the same skillet, add garlic and cook for 30 seconds until fragrant.
  4. Pour in heavy cream, lemon juice, and lemon zest. Stir and bring to a simmer.
  5. Add Parmesan cheese and stir until melted and sauce slightly thickens.
  6. Return shrimp and tortellini to the skillet. Toss to coat evenly with the sauce.
  7. Garnish with fresh parsley and serve hot.

Notes

  • Use fresh or frozen shrimp, just make sure they are fully thawed.
  • Add red pepper flakes for a little heat.
  • Great with a side of garlic bread or a crisp green salad.
  • To lighten it up, you can use half-and-half instead of heavy cream.
