Ingredients

  • 3 cups corn kernels (fresh, frozen, or canned)
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup crumbled cotija or feta cheese
  • ยฝ cup shredded cheddar or Monterey Jack cheese
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon cumin
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Jalapeรฑo slices (optional, for heat)
  • Additional cotija cheese and a sprinkle of chili powder or Tajรญn for garnish


Instructions

  1. In a mixing bowl, combine corn kernels, mayonnaise, sour cream, cotija/feta cheese, shredded cheese, and lime juice.
  2. Add chili powder, smoked paprika, garlic powder, cumin, salt, and pepper. Mix well to combine.
  3. Transfer dip to a serving dish.
  4. Garnish with chopped cilantro, jalapeรฑo slices, extra cotija cheese, and a sprinkle of chili powder or Tajรญn seasoning.
