Ingredients
- 3 cups corn kernels (fresh, frozen, or canned)
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup crumbled cotija or feta cheese
- ยฝ cup shredded cheddar or Monterey Jack cheese
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- ยฝ teaspoon garlic powder
- ยฝ teaspoon cumin
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Jalapeรฑo slices (optional, for heat)
- Additional cotija cheese and a sprinkle of chili powder or Tajรญn for garnish
Instructions
- In a mixing bowl, combine corn kernels, mayonnaise, sour cream, cotija/feta cheese, shredded cheese, and lime juice.
- Add chili powder, smoked paprika, garlic powder, cumin, salt, and pepper. Mix well to combine.
- Transfer dip to a serving dish.
- Garnish with chopped cilantro, jalapeรฑo slices, extra cotija cheese, and a sprinkle of chili powder or Tajรญn seasoning.
