Description
This Easy Boursin Orzo Bake is a creamy, comforting, one-pan meal packed with tender chicken, fresh vegetables, and velvety Boursin cheese. It’s flavorful, quick to prepare, and perfect for busy weeknights.
Ingredients
- 1 lb boneless, skinless chicken breast or thighs, diced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 1 cup uncooked orzo
- 2 1/4 cups chicken broth
- 1 (5.2 oz) package Boursin garlic & herb cheese
- 1 cup cherry tomatoes, halved
- 1 zucchini, diced
- 1 cup baby spinach
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil or parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In an oven-safe skillet, heat olive oil over medium heat. Season the diced chicken with salt and pepper and cook until lightly browned.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in the uncooked orzo, coating it in the chicken and garlic mixture.
- Pour in the chicken broth and stir. Add the Boursin cheese in the center of the pan.
- Add cherry tomatoes and zucchini around the cheese. Do not stir.
- Bake uncovered for 15–20 minutes, or until orzo is tender and most liquid is absorbed.
- Remove from the oven and stir everything together until creamy.
- Fold in baby spinach and optional Parmesan. Let sit 2 minutes to soften the spinach.
- Garnish with fresh basil or parsley and serve warm.
Notes
- Swap chicken with shrimp or leave it out for a vegetarian version.
- Add red pepper flakes for heat.
