This Easy Boursin Orzo Bake is a creamy, comforting, one-pan meal packed with tender chicken, fresh vegetables, and velvety Boursin cheese. It’s flavorful, quick to prepare, and perfect for busy weeknights.


Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 cup uncooked orzo
  • 2 1/4 cups chicken broth
  • 1 (5.2 oz) package Boursin garlic & herb cheese
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 cup baby spinach
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley, for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Season the diced chicken with salt and pepper and cook until lightly browned.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in the uncooked orzo, coating it in the chicken and garlic mixture.
  5. Pour in the chicken broth and stir. Add the Boursin cheese in the center of the pan.
  6. Add cherry tomatoes and zucchini around the cheese. Do not stir.
  7. Bake uncovered for 15–20 minutes, or until orzo is tender and most liquid is absorbed.
  8. Remove from the oven and stir everything together until creamy.
  9. Fold in baby spinach and optional Parmesan. Let sit 2 minutes to soften the spinach.
  10. Garnish with fresh basil or parsley and serve warm.

Notes

  • Swap chicken with shrimp or leave it out for a vegetarian version.
