Ingredients
- 1 1/2 cups unsalted butter (339g), slightly chilled
- 2 cups white sugar (400g)
- 4 large eggs, room temperature
- 1 tsp vanilla essence (4.2g)
- 1 tsp peppermint essence (4.2g)
- 5 cups all-purpose flour (600g)
- 2 tsp baking powder (8g)
- 1 tsp salt (6g)
- For the icing:
2 cups unsalted butter (452g), slightly chilled, 6 cups icing sugar (750g, sifted), 3 tbsp heavy cream (44.3g), 1 tsp peppermint essence (4.2g), pinch of salt
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream 1 1/2 cups butter with sugar until light and fluffy.
- Add eggs, vanilla, and peppermint essence; mix well.
- In a separate bowl, combine flour, baking powder, and salt.
- Gradually add dry ingredients to wet mixture until combined.
- Roll dough into desired shapes and place on greased baking sheets.
- Bake for 10–12 minutes or until edges are lightly golden. Let cool completely.
- Prepare icing by creaming 2 cups butter, gradually adding sifted icing sugar, heavy cream, peppermint essence, and a pinch of salt until smooth.
- Ice cooled cookies and let set before serving.

- Chilling the dough slightly makes shaping easier.
