Ingredients
- 12 ounces linguine pasta
- 1 pound boneless, skinless chicken breasts, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 teaspoon crushed red pepper flakes (optional)
- 1 lemon, juiced
- ยผ cup chopped fresh parsley
- ยผ cup grated Parmesan cheese
- ยฝ cup chicken broth
- ยฝ cup heavy cream
Instructions
- Cook linguine according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and cook until browned and cooked through. Remove and set aside.
- In the same skillet, melt butter over medium heat. Add garlic and sautรฉ for 1 minute.
- Stir in Dijon mustard, red pepper flakes (if using), lemon juice, and chicken broth. Let simmer for 2โ3 minutes.
- Pour in heavy cream and stir to combine. Simmer until slightly thickened.
- Return chicken to the skillet and toss in the cooked pasta. Mix until evenly coated.
- Stir in Parmesan and parsley. Adjust seasoning to taste and serve warm.
