Ingredients

  • 12 ounces linguine pasta
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 lemon, juiced
  • ยผ cup chopped fresh parsley
  • ยผ cup grated Parmesan cheese
  • ยฝ cup chicken broth
  • ยฝ cup heavy cream


Instructions

  1. Cook linguine according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and cook until browned and cooked through. Remove and set aside.
  3. In the same skillet, melt butter over medium heat. Add garlic and sautรฉ for 1 minute.
  4. Stir in Dijon mustard, red pepper flakes (if using), lemon juice, and chicken broth. Let simmer for 2โ€“3 minutes.
  5. Pour in heavy cream and stir to combine. Simmer until slightly thickened.
  6. Return chicken to the skillet and toss in the cooked pasta. Mix until evenly coated.
  7. Stir in Parmesan and parsley. Adjust seasoning to taste and serve warm.
