This Easy Crockpot Chicken and Dumplings recipe is the ultimate comfort food. Tender chicken and vegetables simmer in a creamy broth while fluffy dumplings cook on top, creating a hearty and satisfying meal with minimal effort.
Ingredients
- 4 boneless, skinless chicken breasts
- 3 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 medium onion, diced
- 3 medium carrots, sliced
- 3 celery stalks, sliced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper, to taste
- 1 cup frozen peas (optional)
- 1 cup heavy cream or half-and-half
- For the dumplings:
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 2 tbsp melted butter
Instructions
- Place chicken breasts, chicken broth, cream of chicken soup, onion, carrots, celery, garlic, thyme, parsley, salt, and pepper into the crockpot. Stir to combine.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is cooked through.
- About 30 minutes before serving, shred the chicken using two forks.
- In a bowl, mix flour, baking powder, salt, milk, and melted butter to form dumpling dough. Drop spoonfuls of dough on top of the crockpot mixture. Cover and cook for 25–30 minutes until dumplings are cooked through.
- Stir in frozen peas and heavy cream, then serve warm over rice or on its own.
Notes
- Use cooked rice or mashed potatoes to serve with extra comfort.
- Dumplings can be made smaller or larger depending on preference.
