Ingredients
- 1 lb lean ground beef
- 8 flour or corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Sour cream (for topping)
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a large skillet over medium heat, cook ground beef and diced onion until beef is browned. Drain excess grease.
- Add garlic, cumin, chili powder, salt, and pepper. Cook for 1โ2 minutes until fragrant.
- Warm tortillas slightly to make them easier to roll.
- Spoon beef mixture into each tortilla, roll tightly, and place seam-side down in a baking dish.
- Pour enchilada sauce evenly over the top.
- Sprinkle shredded cheese over the sauce.
- Bake for 20โ25 minutes until cheese is melted and bubbly.
- Serve warm with sour cream on top.
