Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a large skillet over medium heat, cook ground beef and diced onion until beef is browned. Drain excess grease.
  3. Add garlic, cumin, chili powder, salt, and pepper. Cook for 1โ€“2 minutes until fragrant.
  4. Warm tortillas slightly to make them easier to roll.
  5. Spoon beef mixture into each tortilla, roll tightly, and place seam-side down in a baking dish.
  6. Pour enchilada sauce evenly over the top.
  7. Sprinkle shredded cheese over the sauce.
  8. Bake for 20โ€“25 minutes until cheese is melted and bubbly.
  9. Serve warm with sour cream on top.
