Description

Easy Ground Beef Enchiladas loaded with savory beef, onions, and cheese, smothered in rich enchilada sauce. Perfect for a family dinner and topped with sour cream for extra creaminess.


Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef with diced onion and garlic until beef is browned and onion is softened.
  3. Add cumin and chili powder; stir well.
  4. Spread a thin layer of enchilada sauce in a baking dish.
  5. Spoon beef mixture evenly into tortillas, roll them up, and place seam side down in the baking dish.
  6. Pour remaining enchilada sauce over the tortillas and sprinkle with shredded cheese.
  7. Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
  8. Serve warm topped with sour cream.
