Ingredients
- 2 large eggs, beaten lightly
- 1/2 cup melted unsalted butter, cooled slightly
- 1 box corn muffin mix (Jiffy brand recommended)
- 1 cup sour cream
- 1 can corn kernels, drained
- 1 can creamed corn
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine beaten eggs, melted butter, sour cream, corn kernels, creamed corn, and corn muffin mix. Stir until fully combined.
- Pour mixture into the prepared baking dish and spread evenly.
- Bake for 45–50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let rest for 5–10 minutes before serving. Enjoy warm.
