Description

Egg Roll in a Bowl is a quick and healthy one-pan meal packed with lean ground beef, crisp cabbage, carrots, garlic, and savory Asian-inspired flavors. It delivers all the delicious taste of an egg roll—without the wrapper—ready in under 30 minutes.

Ingredients

  • 1 lb lean ground beef (85/15)
  • 1 Tbsp olive oil
  • ½ tsp fine sea salt, or to taste
  • ¼ tsp black pepper, or to taste
  • ½ medium onion, finely diced
  • 1 medium carrot, julienned or coarsely grated
  • 3 garlic cloves, minced
  • 3 cups green cabbage, thinly sliced
  • 1 tsp ground ginger
  • ¼ cup low-sodium soy sauce
  • 2 tsp sesame oil
  • ½ tsp granulated sugar
  • 1 Tbsp chopped green onion (optional, for garnish)
  • ¼ tsp sesame seeds (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef, salt, and pepper. Cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
  2. Add diced onion and carrot. Sauté for 3–4 minutes until softened.
  3. Stir in minced garlic and ground ginger. Cook for 30 seconds until fragrant.
  4. Add sliced cabbage and cook for 5–7 minutes, stirring occasionally, until cabbage is tender but still slightly crisp.
  5. Pour in soy sauce, sesame oil, and sugar. Stir well to combine and cook for another 2–3 minutes.
  6. Remove from heat. Garnish with green onions and sesame seeds if desired. Serve warm.

Notes

  • For a lighter option, substitute ground turkey or chicken.
  • Add a pinch of red pepper flakes for a spicy kick.
