Eggs in Crispy Hash Brown Baskets are the perfect breakfast or brunch treat. Crispy hash brown cups hold savory eggs, cheese, and optional add-ins like bacon or vegetables, making a fun, customizable, and hearty meal.
Ingredients
- 2 cups shredded hash browns (fresh or frozen, thawed)
- 1 cup shredded cheese (cheddar, mozzarella, or blend)
- 6 large eggs
- 2 tablespoons olive oil or melted butter
- Salt and pepper, to taste
- Optional add-ins: diced cooked bacon or sausage, chopped spinach or bell peppers, diced avocado (add after baking), paprika, onion powder, garlic powder
Instructions
- Preheat oven to 400°F (200°C) and grease a 12-cup muffin tin with oil or non-stick spray.
- In a bowl, mix hash browns with 1/2 cup cheese, olive oil or butter, and a pinch of salt and pepper.
- Press hash brown mixture into muffin cups to form small baskets.
- Bake for 15 minutes until edges start to crisp.
- Remove from oven and carefully crack one egg into each basket. Add remaining cheese and optional add-ins.
- Bake an additional 12–15 minutes until eggs are cooked to your liking.
- Cool slightly before serving; top with diced avocado if desired.
Notes
- These baskets can be made ahead and refrigerated; reheat in oven before serving.
