Eggs in Crispy Hash Brown Baskets are the perfect breakfast or brunch treat. Crispy hash brown cups hold savory eggs, cheese, and optional add-ins like bacon or vegetables, making a fun, customizable, and hearty meal.


Ingredients

  • 2 cups shredded hash browns (fresh or frozen, thawed)
  • 1 cup shredded cheese (cheddar, mozzarella, or blend)
  • 6 large eggs
  • 2 tablespoons olive oil or melted butter
  • Salt and pepper, to taste
  • Optional add-ins: diced cooked bacon or sausage, chopped spinach or bell peppers, diced avocado (add after baking), paprika, onion powder, garlic powder


Instructions

  1. Preheat oven to 400°F (200°C) and grease a 12-cup muffin tin with oil or non-stick spray.
  2. In a bowl, mix hash browns with 1/2 cup cheese, olive oil or butter, and a pinch of salt and pepper.
  3. Press hash brown mixture into muffin cups to form small baskets.
  4. Bake for 15 minutes until edges start to crisp.
  5. Remove from oven and carefully crack one egg into each basket. Add remaining cheese and optional add-ins.
  6. Bake an additional 12–15 minutes until eggs are cooked to your liking.
  7. Cool slightly before serving; top with diced avocado if desired.
