Ingredients

  • 6 hard-boiled eggs, peeled
  • 2 tablespoons green pesto
  • Salt, to taste
  • Black pepper, a pinch
  • 2 tablespoons mayonnaise
  • 12 candy eyes (large)
  • Red gel food color


Instructions

  1. Slice the hard-boiled eggs in half lengthwise and carefully remove the yolks.
  2. In a small bowl, mash the yolks with pesto, mayonnaise, salt, and pepper until smooth and creamy.
  3. Spoon or pipe the pesto filling back into the egg whites.
  4. Use the red gel food color to draw squiggly “veins” on the white part of each egg to make them look bloodshot.
  5. Place a large candy eye on top of the green filling to create the eyeball effect.
