Description

These Frosted Peppermint Brownies are rich, fudgy, and topped with a creamy peppermint frosting that brings the perfect holiday touch. A delightful mix of chocolate and peppermint for every festive occasion!


Ingredients

For the Brownies

  • 1/2 cup unsalted butter – melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 tsp vanilla extract
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder – sifted
  • 1/8 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup semisweet chocolate or bittersweet chocolate, chopped (optional)

For the Frosting

  • 4 oz white chocolate – chopped
  • 1/2 cup unsalted butter – room temperature
  • 1 cup powdered sugar
  • 2 tbsp whole milk or heavy cream
  • 1/2 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • Pinch salt
  • 1/4 cup candy canes – finely crushed and divided


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together melted butter, granulated sugar, brown sugar, and vanilla extract until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, combine flour, cocoa powder, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture.
  5. Stir in the chopped chocolate (if using) and pour the batter into the prepared pan, spreading evenly.
  6. Bake for 25โ€“30 minutes, or until a toothpick inserted in the center comes out with moist crumbs. Let cool completely.
  7. For the frosting, melt the white chocolate gently and allow it to cool slightly.
  8. In a bowl, beat butter until creamy, then add powdered sugar, milk, vanilla, peppermint extract, and salt. Mix until fluffy.
  9. Blend in the melted white chocolate until smooth.
  10. Spread the frosting evenly over the cooled brownies and sprinkle with crushed candy canes. Chill for 15 minutes before slicing.

  • For extra peppermint crunch, mix some crushed candy canes into the frosting.
