These Frosted Peppermint Brownies are rich, fudgy, and topped with a creamy peppermint frosting that brings the perfect holiday touch. A delightful mix of chocolate and peppermint for every festive occasion!
Ingredients
For the Brownies
- 1/2 cup unsalted butter – melted
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 tsp vanilla extract
- 2 eggs
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder – sifted
- 1/8 tsp baking powder
- 1/2 tsp salt
- 1/3 cup semisweet chocolate or bittersweet chocolate, chopped (optional)
For the Frosting
- 4 oz white chocolate – chopped
- 1/2 cup unsalted butter – room temperature
- 1 cup powdered sugar
- 2 tbsp whole milk or heavy cream
- 1/2 tsp vanilla extract
- 1/2 tsp peppermint extract
- Pinch salt
- 1/4 cup candy canes – finely crushed and divided
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Grease or line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, whisk together melted butter, granulated sugar, brown sugar, and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, combine flour, cocoa powder, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture.
- Stir in the chopped chocolate (if using) and pour the batter into the prepared pan, spreading evenly.
- Bake for 25โ30 minutes, or until a toothpick inserted in the center comes out with moist crumbs. Let cool completely.
- For the frosting, melt the white chocolate gently and allow it to cool slightly.
- In a bowl, beat butter until creamy, then add powdered sugar, milk, vanilla, peppermint extract, and salt. Mix until fluffy.
- Blend in the melted white chocolate until smooth.
- Spread the frosting evenly over the cooled brownies and sprinkle with crushed candy canes. Chill for 15 minutes before slicing.
Notes
- Make sure brownies are fully cooled before frosting.
- For extra peppermint crunch, mix some crushed candy canes into the frosting.
- Store brownies in an airtight container for up to 4 days.
