Description

This Garlic Herb Butter Chicken is juicy, flavorful, and bursting with fresh herb aromas. It’s perfect for a quick dinner or an elegant meal—deliciously golden on the outside, tender and juicy inside.


Ingredients

For the Garlic Herb Butter

  • ½ cup unsalted butter (at room temperature)
  • 3 tablespoons roughly chopped fresh parsley
  • 1 tablespoon herbs of choice
  • 2 teaspoons roughly chopped garlic (approximately 1 clove)
  • 1 teaspoon garlic powder
  • 2 tablespoons roughly chopped shallots
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon salt (adjust to taste)
  • Freshly cracked black pepper (to taste)

For the Chicken

  • 4 medium chicken breasts (or 2 large breasts halved into cutlets, approx. 2 pounds)
  • Salt (to taste)
  • Freshly cracked black pepper (to taste)
  • 2 tablespoons avocado oil (or other neutral oil)
  • 1 cup water (if needed)
  • ½ cup dry white wine (or chicken broth)


Instructions

  1. In a bowl, mix all herb butter ingredients until combined. Set aside.
  2. Season chicken breasts with salt and pepper on both sides.
  3. Heat avocado oil in a large skillet over medium-high heat.
  4. Sear chicken for 3–4 minutes per side until golden brown. Remove from pan and set aside.
  5. Add white wine (or broth) to deglaze the pan, scraping up brown bits.
  6. Lower heat and add the prepared garlic herb butter to melt.
  7. Return chicken to the pan and spoon butter mixture over the top.
  8. Cover and simmer for 8–10 minutes, adding water if needed for moisture, until chicken is fully cooked.
  9. Serve with extra pan sauce drizzled on top.
