Ingredients

  • 2 lbs ground chicken
  • 1 cup panko bread crumbs
  • ½ cup grated Parmesan cheese, plus more for topping
  • ¼ cup milk
  • 2 large eggs, lightly beaten
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh parsley
  • ¼ cup chicken broth
  • 2 tablespoons butter, melted
  • 1 tablespoon garlic powder


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, panko, Parmesan, milk, eggs, garlic, olive oil, Italian seasoning, salt, pepper, and parsley. Mix until well combined.
  3. Shape mixture into a loaf and place in a greased baking pan.
