Ingredients
- 2 lbs ground chicken
- 1 cup panko bread crumbs
- ½ cup grated Parmesan cheese, plus more for topping
- ¼ cup milk
- 2 large eggs, lightly beaten
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup chopped fresh parsley
- ¼ cup chicken broth
- 2 tablespoons butter, melted
- 1 tablespoon garlic powder
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground chicken, panko, Parmesan, milk, eggs, garlic, olive oil, Italian seasoning, salt, pepper, and parsley. Mix until well combined.
- Shape mixture into a loaf and place in a greased baking pan.
- In a small bowl, mix chicken broth, melted butter, and garlic powder; pour over meatloaf.
- Bake for 50–60 minutes, until meatloaf is cooked through and topping is golden.
- Remove from oven and let rest 5–10 minutes before slicing.
Notes
- Top with extra Parmesan cheese before baking for added flavor.
- Serve with mashed potatoes or roasted vegetables for a complete meal.
- Leftovers can be refrigerated for 3 days or frozen for later.
