Description
These Garlic Parmesan Chicken Meatloaves are tender, flavorful, and packed with a perfect mix of herbs, garlic, and cheese. Ideal for a weeknight dinner or meal prep!
Ingredients
- 450 grams ground chicken
- 60 grams grated Parmesan cheese
- 60 grams breadcrumbs
- 15 grams fresh parsley, finely chopped
- 3 garlic cloves, minced
- 1 large egg, beaten
- 1 teaspoon dried oregano
- 0.5 teaspoon fine sea salt
- 0.25 teaspoon freshly ground black pepper
- 60 millilitres whole milk
- 2 tablespoons extra virgin olive oil
- 25 grams grated mozzarella cheese (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish or line with parchment paper.
- In a large bowl, combine ground chicken, Parmesan, breadcrumbs, parsley, garlic, egg, oregano, salt, pepper, and milk. Mix until fully combined.
- Shape the mixture into individual meatloaves or one large loaf and place in prepared dish.
- Brush the top with olive oil and sprinkle mozzarella cheese if using.
- Bake for 25–30 minutes (for individual meatloaves) or 40–45 minutes (for a large loaf) until fully cooked and internal temperature reaches 165°F (74°C).
- Let rest 5 minutes before serving. Garnish with extra parsley if desired.
Notes
- Do not overmix the meatloaf mixture to keep it tender.
- Optional mozzarella adds extra gooeyness and flavor.
- Leftovers can be refrigerated and reheated for meal prep.
