Description

These Garlic Parmesan Chicken Meatloaves are tender, flavorful, and packed with a perfect mix of herbs, garlic, and cheese. Ideal for a weeknight dinner or meal prep!


Ingredients

  • 450 grams ground chicken
  • 60 grams grated Parmesan cheese
  • 60 grams breadcrumbs
  • 15 grams fresh parsley, finely chopped
  • 3 garlic cloves, minced
  • 1 large egg, beaten
  • 1 teaspoon dried oregano
  • 0.5 teaspoon fine sea salt
  • 0.25 teaspoon freshly ground black pepper
  • 60 millilitres whole milk
  • 2 tablespoons extra virgin olive oil
  • 25 grams grated mozzarella cheese (optional)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish or line with parchment paper.
  2. In a large bowl, combine ground chicken, Parmesan, breadcrumbs, parsley, garlic, egg, oregano, salt, pepper, and milk. Mix until fully combined.
  3. Shape the mixture into individual meatloaves or one large loaf and place in prepared dish.
  4. Brush the top with olive oil and sprinkle mozzarella cheese if using.
  5. Bake for 25–30 minutes (for individual meatloaves) or 40–45 minutes (for a large loaf) until fully cooked and internal temperature reaches 165°F (74°C).
  6. Let rest 5 minutes before serving. Garnish with extra parsley if desired.

Notes

  • Do not overmix the meatloaf mixture to keep it tender.
  • Optional mozzarella adds extra gooeyness and flavor.
  • Leftovers can be refrigerated and reheated for meal prep.
