Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- In a skillet, heat olive oil and sear chicken breasts until golden brown (optional).
- Place chicken and halved potatoes in the slow cooker.
- In a small bowl, combine chicken broth, garlic, Italian seasoning, salt, pepper, and red pepper flakes (if using).
- Pour the mixture over the chicken and potatoes.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is fully cooked and potatoes are tender.
- Sprinkle grated Parmesan cheese over the chicken and potatoes 10–15 minutes before serving.
- Garnish with fresh parsley and serve warm.
