Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Spray your crockpot with non-stick cooking spray or lightly grease with olive oil.
- Place halved baby potatoes in the bottom of the crockpot and drizzle with 1 tablespoon of olive oil. Season with half of the Italian seasoning, salt, and pepper.
- Place chicken breasts on top of the potatoes. Drizzle with the remaining olive oil and sprinkle with garlic, Parmesan, remaining Italian seasoning, and red pepper flakes (if using).
- Pour chicken broth evenly over the top.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is cooked through and potatoes are tender.
