Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Lightly coat the crockpot with cooking spray or a little olive oil.
- Place halved baby potatoes at the bottom of the crockpot.
- Season chicken breasts with salt, pepper, Italian seasoning, and red pepper flakes.
- Heat olive oil in a skillet over medium heat and sear chicken breasts for 2โ3 minutes per side (optional for extra flavor).
- Place chicken on top of potatoes in the crockpot.
- Mix chicken broth, minced garlic, and Parmesan cheese, then pour over chicken and potatoes.
- Cover and cook on low for 4โ5 hours or on high for 2โ3 hours, until chicken is fully cooked and potatoes are tender.
- Garnish with fresh parsley before serving.
