Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Place the halved baby potatoes at the bottom of the crockpot.
- Season chicken breasts with salt, pepper, Italian seasoning, and red pepper flakes.
- Place the chicken on top of the potatoes.
- In a small bowl, mix chicken broth, minced garlic, olive oil, and parmesan cheese.
- Pour the mixture over the chicken and potatoes.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley before serving.
