Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)


Instructions

  1. In a small bowl, whisk together chicken broth, Parmesan cheese, minced garlic, Italian seasoning, salt, pepper, red pepper flakes (if using), and olive oil.
  2. Place the halved baby potatoes in the bottom of the slow cooker. Pour half of the sauce over the potatoes and toss to coat.
  3. Arrange chicken breasts on top of the potatoes and pour the remaining sauce evenly over the chicken.
  4. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is fully cooked and the potatoes are tender.
  5. Garnish with fresh parsley before serving and enjoy warm.
