Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- In a small bowl, whisk together chicken broth, Parmesan cheese, minced garlic, Italian seasoning, salt, pepper, red pepper flakes (if using), and olive oil.
- Place the halved baby potatoes in the bottom of the slow cooker. Pour half of the sauce over the potatoes and toss to coat.
- Arrange chicken breasts on top of the potatoes and pour the remaining sauce evenly over the chicken.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is fully cooked and the potatoes are tender.
- Garnish with fresh parsley before serving and enjoy warm.
