This Ginger Lime BEEF with Coconut Rice is bright, aromatic, and full of fresh Southeast Asian flavors. Tender BEEF medallions (or ground BEEF) are cooked in a zesty lime-ginger sauce, topped with herbs, scallions, and peanuts—paired with creamy coconut rice for the perfect balance of tangy, savory, and rich.


Ingredients

BEEF & Sauce

  • 1.5 lbs BEEF tenderloin, sliced into 1-inch medallions (or 1 lb ground BEEF)
  • 3 tbsp fresh ginger, minced
  • 3 limes, juiced (about 1/3 cup)
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 12 tsp sriracha (to taste)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 scallions, white and green parts separated
  • 1/4 cup roasted peanuts, roughly chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp fresh mint leaves (optional)
  • 2 tbsp Thai basil, torn (optional)

Coconut Rice

  • 1 cup jasmine rice
  • 1 can (14 oz) coconut milk
  • 1 cup water
  • 1 tsp salt
  • 1 tbsp butter
  • 1/4 cup toasted coconut flakes (optional)


Instructions

  1. Cook the Coconut Rice: In a pot, combine jasmine rice, coconut milk, water, salt, and butter. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Let rest 10 minutes, then fluff and top with coconut flakes.
  2. Prepare the BEEF: Season BEEF with salt and pepper. Heat oil in a pan over medium-high. Sear BEEF medallions 3–4 minutes per side (or cook ground BEEF until browned). Remove and set aside.
  3. Make the Sauce: In the same pan, add ginger, garlic, and scallion whites. Cook 1 minute. Add lime juice, soy sauce, brown sugar, and sriracha. Simmer for 2 minutes.
  4. Return BEEF to the pan and toss to coat in sauce. Cook until BEEF is fully cooked and the sauce thickens slightly.
  5. Turn off heat and stir in cilantro, mint, Thai basil, and scallion greens.
  6. Serve BEEF over coconut rice and top with chopped peanuts.
