Description

Hawaiian Chicken Kebabs are a sweet and savory treat perfect for summer grilling. Tender chicken, colorful bell peppers, onions, and pineapple chunks are coated in a tangy-sweet marinade and grilled to perfection.

Ingredients

  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • Chicken pieces (bite-sized)
  • Bell peppers (any color, cut into bite-sized pieces)
  • Onions (cut into bite-sized pieces)
  • Pineapple chunks
  • Skewers

Instructions

  1. In a bowl, combine ketchup, brown sugar, soy sauce, and pineapple juice to make the marinade.
  2. Thread chicken, bell peppers, onions, and pineapple chunks onto skewers.
  3. Brush the kebabs with the marinade and let sit for at least 15 minutes.
  4. Preheat grill to medium-high heat. Grill kebabs for 10–12 minutes, turning occasionally and basting with remaining marinade, until chicken is cooked through.
  5. Remove from grill and serve warm.

Notes

  • Soak wooden skewers in water for 30 minutes to prevent burning.
  • Vegetables can be swapped with zucchini or cherry tomatoes for variation.
  • Leftovers can be refrigerated and reheated for quick meals.
