Description

Healthy Baked Chicken Parmesan is a lighter take on the classic Italian-American favorite. Made with whole wheat breadcrumbs, lean chicken breasts, and baked instead of fried, this dish is both nutritious and delicious.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (about 3 large breasts) OR 1.5 lbs chicken cutlets
  • ½ cup whole wheat flour
  • 3 large eggs
  • 1.5 cup shredded mozzarella
  • 1.5 cups marinara sauce

Breading Mixture

  • 1 cup whole wheat bread crumbs (unseasoned)
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Set up a breading station: one plate with flour, one bowl with beaten eggs, and one plate with the breading mixture.
  3. Coat each chicken breast in flour, then dip in eggs, then press into the breading mixture to coat evenly.
  4. Place chicken on prepared baking sheet and lightly spray with cooking spray.
  5. Bake for 20 minutes, then flip the chicken and bake an additional 10–15 minutes until fully cooked.
  6. Remove from oven, spoon marinara sauce over each piece, and sprinkle mozzarella on top.
  7. Return to oven for 5–7 minutes until cheese is melted and bubbly. Serve hot.

Notes

  • Use fresh herbs for added flavor if available.
  • Serve with whole grain pasta or a side salad for a complete meal.
  • Leftovers can be reheated in the oven for best texture.
