Description
Healthy Baked Chicken Parmesan is a lighter take on the classic Italian-American favorite. Made with whole wheat breadcrumbs, lean chicken breasts, and baked instead of fried, this dish is both nutritious and delicious.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts (about 3 large breasts) OR 1.5 lbs chicken cutlets
- ½ cup whole wheat flour
- 3 large eggs
- 1.5 cup shredded mozzarella
- 1.5 cups marinara sauce
Breading Mixture
- 1 cup whole wheat bread crumbs (unseasoned)
- ½ cup grated Parmesan cheese
- ¼ teaspoon black pepper
- 2 teaspoons dried basil
- 2 teaspoons dried parsley
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Set up a breading station: one plate with flour, one bowl with beaten eggs, and one plate with the breading mixture.
- Coat each chicken breast in flour, then dip in eggs, then press into the breading mixture to coat evenly.
- Place chicken on prepared baking sheet and lightly spray with cooking spray.
- Bake for 20 minutes, then flip the chicken and bake an additional 10–15 minutes until fully cooked.
- Remove from oven, spoon marinara sauce over each piece, and sprinkle mozzarella on top.
- Return to oven for 5–7 minutes until cheese is melted and bubbly. Serve hot.
Notes
- Use fresh herbs for added flavor if available.
- Serve with whole grain pasta or a side salad for a complete meal.
- Leftovers can be reheated in the oven for best texture.
