Ingredients

  • 1 tablespoon olive oil
  • 12 ounces smoked sausage, sliced into rounds
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon chili powder
  • 1 cup long-grain white rice, uncooked
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 cups chicken broth (low sodium preferred)
  • Salt and black pepper, to taste
  • ¼ cup fresh cilantro, chopped (for garnish)
  • 1 lime, cut into wedges (for serving)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sausage slices and cook until browned, about 4–5 minutes. Remove and set aside.
  2. Add diced onion and bell pepper to the skillet and sauté until softened, about 3–4 minutes.
  3. Add garlic, cumin, smoked paprika, oregano, and chili powder. Stir for 1 minute until fragrant.
  4. Stir in uncooked rice, then pour in chicken broth. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15 minutes. Stir in black beans and cooked sausage, then cover and cook another 5–7 minutes until rice is tender and liquid is absorbed.
  6. Season with salt and pepper to taste. Garnish with fresh cilantro and serve with lime wedges.
