Description

This Hearty Lasagna Soup with Bow Tie Pasta captures all the comforting flavors of classic lasagna in a warm, satisfying soup. Packed with ground beef, bow tie pasta, rich tomato sauce, and topped with creamy cheeses and fresh parsley, it’s perfect for a cozy family dinner.

Ingredients

  • 1 to 2 tbsp olive oil or chosen cooking oil
  • 1 lb ground beef
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) tomato sauce or puree
  • 1/3 cup tomato paste (about half a 6 oz can)
  • 4 cups chicken stock
  • 1 to 2 cups water, as needed for texture
  • 1 tbsp Italian herb blend
  • 1 tsp sea salt (or more to taste)
  • Ground black pepper, to taste
  • 8 oz uncooked bowtie pasta
  • For serving:
  • 1/2 cup ricotta cheese
  • 2 oz mozzarella cheese, shredded (about 1/2 cup)
  • 1/4 cup parmesan cheese, shaved or grated
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté 3–4 minutes until softened.
  2. Add minced garlic and cook 1 more minute until fragrant.
  3. Add ground beef and cook until browned. Drain excess fat if needed.
  4. Stir in diced tomatoes, tomato sauce, tomato paste, chicken stock, water (if needed), Italian herb blend, salt, and pepper. Bring to a gentle boil.
  5. Add uncooked bow tie pasta and simmer uncovered 12–15 minutes until pasta is tender and soup is thickened.
  6. Adjust seasoning as needed. Serve hot, topped with ricotta, shredded mozzarella, parmesan, and fresh parsley.

Notes

  • Use any short pasta if bow tie pasta is unavailable.
  • Leftovers store well in the fridge for 3–4 days and can be reheated on the stovetop.
  • Optional: add red pepper flakes for a bit of heat.
