Description
This Hearty Lasagna Soup with Bow Tie Pasta captures all the comforting flavors of classic lasagna in a warm, satisfying soup. Packed with ground beef, bow tie pasta, rich tomato sauce, and topped with creamy cheeses and fresh parsley, it’s perfect for a cozy family dinner.
Ingredients
- 1 to 2 tbsp olive oil or chosen cooking oil
- 1 lb ground beef
- 1 large yellow onion, diced
- 4 garlic cloves, minced
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (15 oz) tomato sauce or puree
- 1/3 cup tomato paste (about half a 6 oz can)
- 4 cups chicken stock
- 1 to 2 cups water, as needed for texture
- 1 tbsp Italian herb blend
- 1 tsp sea salt (or more to taste)
- Ground black pepper, to taste
- 8 oz uncooked bowtie pasta
- For serving:
- 1/2 cup ricotta cheese
- 2 oz mozzarella cheese, shredded (about 1/2 cup)
- 1/4 cup parmesan cheese, shaved or grated
- 1/4 cup chopped fresh parsley
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté 3–4 minutes until softened.
- Add minced garlic and cook 1 more minute until fragrant.
- Add ground beef and cook until browned. Drain excess fat if needed.
- Stir in diced tomatoes, tomato sauce, tomato paste, chicken stock, water (if needed), Italian herb blend, salt, and pepper. Bring to a gentle boil.
- Add uncooked bow tie pasta and simmer uncovered 12–15 minutes until pasta is tender and soup is thickened.
- Adjust seasoning as needed. Serve hot, topped with ricotta, shredded mozzarella, parmesan, and fresh parsley.
Notes
- Use any short pasta if bow tie pasta is unavailable.
- Leftovers store well in the fridge for 3–4 days and can be reheated on the stovetop.
- Optional: add red pepper flakes for a bit of heat.
