Ingredients
- 8 oz dry macaroni (whole wheat or chickpea optional)
- 1 lb lean ground beef (or ground turkey/chickpeas)
- 1 cup chopped white onion
- 2 cloves minced garlic
- 2 cups bell peppers (red, green & yellow)
- 2 tablespoons butter (or olive oil)
- 8 oz light cream cheese
- 1 cup shredded mozzarella
- 4 slices light cheese slices
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- ยฝ teaspoon chili flakes (optional)
- ยผ cup fresh parsley (optional)
Instructions
- Cook macaroni according to package directions. Drain and set aside.
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Add onion, bell peppers, and garlic. Sautรฉ until softened.
- Stir in butter and cream cheese until melted and smooth.
- Add mozzarella and cheese slices. Stir until fully melted and creamy.
- Season with salt, pepper, paprika, and chili flakes.
- Fold in cooked macaroni and mix well until coated.
- Garnish with parsley and serve warm.
Notes
- Use chickpea pasta for extra protein.
- Adjust spice level with more or less chili flakes.
- Best served fresh but reheats well with a splash of milk.
