Description

This High Protein Creamy Taco Soup is the ultimate comfort food packed with flavor and nutrition. Made with lean ground turkey, black beans, and creamy cheeses, it’s a hearty, protein-rich meal that comes together easily in one pot — perfect for weeknight dinners or meal prep.

Ingredients

  • 1 lb (450g) lean ground turkey or chicken
  • 1 tablespoon olive oil
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1 (14.5 oz) can diced tomatoes
  • 1 (10 oz) can green chilies (optional)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground turkey (or chicken) and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in taco seasoning, garlic powder, onion powder, cumin, salt, and pepper. Mix well to coat the meat.
  4. Add diced tomatoes, green chilies (if using), black beans, and chicken broth. Stir to combine.
  5. Bring to a gentle boil, then reduce heat and simmer for 10–15 minutes.
  6. Stir in cubed cream cheese and shredded cheddar until melted and fully incorporated, creating a creamy texture.
  7. Simmer for another 3–5 minutes until soup is thick and creamy. Adjust seasoning as needed.
  8. Serve warm with your favorite toppings like avocado, cilantro, or tortilla chips.

Notes

  • Use light cream cheese for a lower-fat version without losing creaminess.
  • Substitute black beans with kidney or pinto beans for variation.
  • Store leftovers in the fridge for up to 4 days — it reheats beautifully.
