Description
Hobo Casserole is a hearty, comforting ground beef and potato bake layered with creamy mushroom sauce and melted cheddar cheese. This easy dinner is perfect for busy weeknights or cozy family meals.
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 medium potatoes, thinly sliced
- 1 can (10.5 ounces) cream of mushroom soup
- ½ cup milk
- 1 ½ cups shredded cheddar cheese
- ½ teaspoon paprika (optional, for garnish)
- 1 tablespoon butter, melted
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
- In a skillet over medium heat, cook ground beef and chopped onion until beef is browned and onion is tender. Drain excess grease. Stir in garlic powder, onion powder, salt, and black pepper.
- In a small bowl, whisk together the cream of mushroom soup and milk until smooth.
- Layer half of the sliced potatoes in the prepared baking dish. Top with half of the beef mixture and half of the soup mixture. Sprinkle with ½ cup of cheddar cheese.
- Repeat the layers with remaining potatoes, beef, and soup mixture. Cover with foil.
- Bake for 45 minutes, then remove the foil and sprinkle the remaining cheddar cheese on top. Drizzle melted butter and sprinkle paprika if desired.
- Bake uncovered for an additional 15–20 minutes, or until potatoes are tender and cheese is golden and bubbly.
- Let rest for 5 minutes before serving.
Notes
- Substitute cream of chicken or cream of celery soup for a different flavor.
- Add sliced mushrooms or bell peppers for extra veggies.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
