Hobo Casserole with Ground Beef & Potatoes is a hearty, quick, and delicious one-dish meal. Layers of tender potatoes, seasoned beef, and melted cheeses make it perfect for family dinners.
Ingredients
- 1 lb ground beef
- 4-5 medium potatoes, thinly sliced
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- ½ cup beef broth
- ¼ cup milk, optional
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and pepper to taste
- 1 ½ cups shredded cheddar cheese
- ½ cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté onions and garlic until fragrant.
- Add ground beef, cook until browned and season with Italian seasoning, paprika, salt, and pepper.
- In a greased baking dish, layer half of the sliced potatoes, half of the beef mixture, and half of the cheeses. Repeat layers.
- Pour beef broth (and milk if using) over the top.
- Cover with foil and bake for 35-40 minutes, until potatoes are tender.
- Remove foil, bake 10 more minutes to melt and slightly brown the cheese.
- Garnish with fresh parsley and serve warm.
Notes
- Use Yukon Gold or red potatoes for best texture.
- Feel free to add vegetables like bell peppers or carrots for extra nutrition.
- Leftovers reheat well in the oven or microwave.
