Description

Hobo Casserole with Ground Beef & Potatoes is a hearty, quick, and delicious one-dish meal. Layers of tender potatoes, seasoned beef, and melted cheeses make it perfect for family dinners.


Ingredients

  • 1 lb ground beef
  • 4-5 medium potatoes, thinly sliced
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • ½ cup beef broth
  • ¼ cup milk, optional
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and pepper to taste
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté onions and garlic until fragrant.
  3. Add ground beef, cook until browned and season with Italian seasoning, paprika, salt, and pepper.
  4. In a greased baking dish, layer half of the sliced potatoes, half of the beef mixture, and half of the cheeses. Repeat layers.
  5. Pour beef broth (and milk if using) over the top.
  6. Cover with foil and bake for 35-40 minutes, until potatoes are tender.
  7. Remove foil, bake 10 more minutes to melt and slightly brown the cheese.
  8. Garnish with fresh parsley and serve warm.

Notes

  • Use Yukon Gold or red potatoes for best texture.
  • Feel free to add vegetables like bell peppers or carrots for extra nutrition.
