Ingredients
- 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 1 cup vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- 1 cup chopped pecans or walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a bundt pan.
- In a large bowl, mix mashed sweet potatoes, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in nuts if using.
- Pour batter evenly into prepared bundt pan.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan 10–15 minutes, then invert onto a wire rack to cool completely.
- Dust with powdered sugar or drizzle with glaze before serving if desired.
