Ingredients

  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup chopped pecans or walnuts (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a bundt pan.
  2. In a large bowl, mix mashed sweet potatoes, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Fold in nuts if using.
  6. Pour batter evenly into prepared bundt pan.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan 10–15 minutes, then invert onto a wire rack to cool completely.
