Ingredients

  • 8 chicken thighs (skinless and boneless)
  • 2 tbsp cornflour (cornstarch)
  • ยฝ tsp salt
  • ยฝ tsp pepper
  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 4 cloves minced garlic
  • 110 g (1/3 cup) honey
  • 80 ml (1/3 cup) chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce

To Serve:

  • 1 tbsp finely chopped fresh parsley
  • ยฝ tsp chili flakes
  • Boiled rice


Instructions

  1. Pat chicken thighs dry and toss with cornflour, salt, and pepper until evenly coated.
  2. Heat vegetable oil and butter in a large skillet over medium heat.
  3. Add chicken and cook for 5โ€“6 minutes per side until golden and cooked through. Remove chicken and set aside.
  4. Add minced garlic to the pan and sautรฉ for 30 seconds until fragrant.
  5. Whisk together honey, chicken stock, rice vinegar, and soy sauce. Pour into the pan and simmer for 2โ€“3 minutes until slightly thickened.
  6. Return chicken to the pan and coat with the sauce.
  7. Sprinkle with parsley and chili flakes, serve over boiled rice.

Notes

  • Adjust honey and soy sauce to taste for sweeter or saltier sauce.
  • Chicken thighs can be substituted with breasts but may cook faster.
