Ingredients

  • 2 pounds ground chicken, turkey, or lean pork
  • 1 cup shredded Parmesan cheese (or Romano)
  • 1 cup panko breadcrumbs (or regular)
  • 2 large eggs
  • 4 cloves minced garlic
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup whole milk (or plant milk)
  • 2 tablespoons unsalted butter (for glaze)
  • 1/4 cup additional Parmesan for sprinkling
  • 2 tablespoons fresh parsley for garnish


Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC) and line a loaf pan with parchment paper or lightly grease it.
  2. In a large bowl, combine the ground chicken, Parmesan, breadcrumbs, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, pepper, and milk.
  3. Mix gently until just combinedโ€”do not overmix to keep the meatloaf juicy.
