Ingredients
- 2 pounds ground chicken, turkey, or lean pork
- 1 cup shredded Parmesan cheese (or Romano)
- 1 cup panko breadcrumbs (or regular)
- 2 large eggs
- 4 cloves minced garlic
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup whole milk (or plant milk)
- 2 tablespoons unsalted butter (for glaze)
- 1/4 cup additional Parmesan for sprinkling
- 2 tablespoons fresh parsley for garnish
Instructions
- Preheat your oven to 375ยฐF (190ยฐC) and line a loaf pan with parchment paper or lightly grease it.
- In a large bowl, combine the ground chicken, Parmesan, breadcrumbs, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, pepper, and milk.
- Mix gently until just combinedโdo not overmix to keep the meatloaf juicy.
- Transfer the mixture into the loaf pan and shape evenly.
- Brush melted butter on top and sprinkle with extra Parmesan.
- Bake for 40โ50 minutes, or until the internal temperature reaches 165ยฐF (74ยฐC).
