This Lemon Garlic Parmesan Chicken & Rice is a bright, flavorful one-pan dinner. Juicy chicken thighs are seasoned to perfection and cooked with zesty lemon, fragrant garlic, and creamy parmesan rice for a satisfying family-friendly meal.
Ingredients
For the Chicken:
- 4 boneless, skinless chicken thighs (or chicken breasts)
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
For the Rice:
- 1 tablespoon olive oil (or butter)
- 3 garlic cloves, minced
- 1 cup long-grain white rice (uncooked)
- 2 cups chicken broth
- 1 tablespoon lemon juice (freshly squeezed)
- Zest of 1 lemon
- ½ cup grated parmesan cheese
Optional Garnish:
- Fresh parsley, chopped
- Lemon slices
Instructions
- Season chicken with garlic powder, paprika, salt, and pepper.
- Heat 2 tablespoons olive oil in a large skillet over medium heat. Sear chicken for 5–6 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add 1 tablespoon olive oil (or butter) and minced garlic. Sauté for 1 minute until fragrant.
- Stir in the uncooked rice and toast for 1–2 minutes.
- Pour in chicken broth, lemon juice, and lemon zest. Stir to combine and bring to a simmer.
- Reduce heat to low, cover, and cook for 18–20 minutes until rice is tender and liquid is absorbed.
- Stir in parmesan cheese, then return chicken to the skillet. Cover and let rest for 3–4 minutes to warm through.
- Garnish with fresh parsley and lemon slices before serving.
