Description

This Lemon Garlic Parmesan Chicken & Rice is a bright, flavorful one-pan dinner. Juicy chicken thighs are seasoned to perfection and cooked with zesty lemon, fragrant garlic, and creamy parmesan rice for a satisfying family-friendly meal.


Ingredients

For the Chicken:

  • 4 boneless, skinless chicken thighs (or chicken breasts)
  • 1 teaspoon garlic powder
  • ยฝ teaspoon paprika
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • 2 tablespoons olive oil

For the Rice:

  • 1 tablespoon olive oil (or butter)
  • 3 garlic cloves, minced
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 tablespoon lemon juice (freshly squeezed)
  • Zest of 1 lemon
  • ยฝ cup grated parmesan cheese

Optional Garnish:

  • Fresh parsley, chopped
  • Lemon slices


Instructions

  1. Season chicken with garlic powder, paprika, salt, and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Sear chicken for 5โ€“6 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, add 1 tablespoon olive oil (or butter) and minced garlic. Sautรฉ for 1 minute until fragrant.
  4. Stir in the uncooked rice and toast for 1โ€“2 minutes.
  5. Pour in chicken broth, lemon juice, and lemon zest. Stir to combine and bring to a simmer.
  6. Reduce heat to low, cover, and cook for 18โ€“20 minutes until rice is tender and liquid is absorbed.
  7. Stir in parmesan cheese, then return chicken to the skillet. Cover and let rest for 3โ€“4 minutes to warm through.
  8. Garnish with fresh parsley and lemon slices before serving.
