This Loaded Cheddar Ranch Beef and Sweet Corn Rotini Bake is a comforting, cheesy pasta dish perfect for family dinners. Ground beef, sweet corn, rotini, and a creamy ranch-cheddar sauce make it irresistible.


Ingredients

  • 1 lb ground beef
  • 2 cups rotini pasta, cooked and drained
  • 1 cup sweet corn kernels (fresh, frozen, or canned)
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup milk
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a large skillet, heat olive oil over medium heat. Add ground beef, garlic powder, onion powder, salt, and pepper. Cook until browned, then drain excess fat.
  3. Stir in cream cheese, sour cream, milk, and ranch seasoning. Mix until smooth.
  4. Add cooked rotini, sweet corn, and half of the cheddar cheese. Stir to combine.
  5. Transfer mixture to a greased baking dish. Top with remaining cheddar cheese.
  6. Bake for 20โ€“25 minutes until cheese is melted and bubbly. Garnish with chopped parsley and serve warm.
