Ingredients
- 1 lb ground beef
- 2 cups rotini pasta, cooked and drained
- 1 cup sweet corn kernels (fresh, frozen, or canned)
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/2 cup sour cream
- 1 cup milk
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a large skillet, heat olive oil over medium heat. Add ground beef, garlic powder, onion powder, salt, and pepper. Cook until browned, then drain excess fat.
- Stir in cream cheese, sour cream, milk, and ranch seasoning. Mix until smooth.
- Add cooked rotini, sweet corn, and half of the cheddar cheese. Stir to combine.
- Transfer mixture to a greased baking dish. Top with remaining cheddar cheese.
- Bake for 20โ25 minutes until cheese is melted and bubbly. Garnish with chopped parsley and serve warm.
Notes
- Substitute ground turkey for a lighter version.
- Add diced bell peppers or onions for extra flavor.
- Make ahead and bake later; just increase baking time slightly if cold from fridge.
