Loaded Potato Taco Bowl is a hearty and flavorful meal, combining roasted potatoes, seasoned meat, fresh veggies, beans, and creamy toppings for a satisfying one-bowl dinner.
Ingredients
- 1 lb Ground beef or turkey
- 1 Avocado
- 1 can Black beans
- 1 cup Cherry tomatoes
- 1/4 cup Cilantro, fresh
- 1 cup Corn, canned or frozen
- 1 tsp Garlic powder
- 1 Lime
- 1 tsp Onion powder
- 1 Red onion, small
- 4 Russet potatoes, medium-sized
- 1 tsp Chili powder
- 1 tsp Paprika, smoked
- Salt and black pepper, to taste
- 2 tbsp Olive oil
- 1 tsp Cumin
- 1 cup Cheddar cheese
- 1 Sour cream
Instructions
- Preheat oven to 400°F (200°C). Cut potatoes into bite-sized pieces, toss with olive oil, salt, pepper, chili powder, paprika, and cumin. Roast for 25–30 minutes until golden and tender.
- Cook ground beef or turkey in a skillet over medium heat until browned. Season with garlic powder, onion powder, salt, and pepper.
- Warm black beans and corn in a small saucepan or microwave.
- Assemble bowls: add roasted potatoes, cooked meat, black beans, corn, cherry tomatoes, diced red onion, and avocado slices.
- Top with shredded cheddar cheese, a dollop of sour cream, chopped cilantro, and a squeeze of lime juice.
- Serve immediately and enjoy!
