Ingredients

  • 1 lb Ground beef or turkey
  • 1 Avocado
  • 1 can Black beans
  • 1 cup Cherry tomatoes
  • 1/4 cup Cilantro, fresh
  • 1 cup Corn, canned or frozen
  • 1 tsp Garlic powder
  • 1 Lime
  • 1 tsp Onion powder
  • 1 Red onion, small
  • 4 Russet potatoes, medium-sized
  • 1 tsp Chili powder
  • 1 tsp Paprika, smoked
  • Salt and black pepper, to taste
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • 1 cup Cheddar cheese
  • 1 Sour cream


Instructions

  1. Preheat oven to 400°F (200°C). Cut potatoes into bite-sized pieces, toss with olive oil, salt, pepper, chili powder, paprika, and cumin. Roast for 25–30 minutes until golden and tender.
  2. Cook ground beef or turkey in a skillet over medium heat until browned. Season with garlic powder, onion powder, salt, and pepper.
  3. Warm black beans and corn in a small saucepan or microwave.
  4. Assemble bowls: add roasted potatoes, cooked meat, black beans, corn, cherry tomatoes, diced red onion, and avocado slices.
  5. Top with shredded cheddar cheese, a dollop of sour cream, chopped cilantro, and a squeeze of lime juice.
  6. Serve immediately and enjoy!
