Ingredients

  • Salt and black pepper to taste
  • 1 pound ground beef or turkey

  • 1 small red onion, chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 425ยฐF (220ยฐC). Toss diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25โ€“30 minutes until crispy and golden.
