Mac and Cheese Meatloaf Casserole – the ultimate comfort food mashup, combining cheesy macaroni with savory meatloaf in one hearty dish.
Ingredients
- 1 lb ground beef
- 2 cups uncooked macaroni
- 2 cups shredded cheddar cheese
- ½ cup diced onion
- ½ cup breadcrumbs
- 1 large egg
- ¼ cup milk (for meatloaf)
- 2 tbsp butter (for cheese sauce)
- 2 cups milk (for cheese sauce)
- 1 tsp salt
- ½ tsp pepper
- ½ tsp paprika
- ½ tsp dry mustard
- 2 tbsp flour
Instructions
- Preheat oven to 375°F (190°C).
- Cook macaroni according to package directions and drain.
- In a bowl, mix ground beef, diced onion, breadcrumbs, egg, milk, salt, pepper, and paprika. Shape into a loaf.
- Place meatloaf in a greased baking dish and bake for 40–45 minutes.
- Meanwhile, make cheese sauce: melt butter, whisk in flour, gradually add milk, then stir in cheddar cheese until smooth.
- Once meatloaf is cooked, layer macaroni in casserole dish, pour cheese sauce on top, and bake 10 more minutes until bubbly.

- Can be made ahead and reheated for family dinners.
- Optional: top with extra cheese or breadcrumbs for crunch.
