Description

Macaroni Cheeseburger Soup is cozy, hearty comfort food in a bowl. It combines savory ground beef, tender macaroni, tomatoes, and a creamy cheddar base for a soup that tastes just like a classic cheeseburger—perfect for chilly nights or easy family dinners.

Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or beef broth
  • 2 cups elbow macaroni (whole wheat optional)
  • 2 cups shredded cheddar cheese (pepper jack optional)
  • 1 can diced tomatoes, undrained
  • 1 cup milk or half-and-half
  • Salt and pepper, to taste
  • Optional: 1 tsp mustard powder

Instructions

  1. In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
  2. Add onion and cook until softened. Stir in garlic and cook 30 seconds.
  3. Pour in broth and diced tomatoes. Bring to a boil.
  4. Add macaroni and cook until tender, about 8–10 minutes.
  5. Reduce heat to low. Stir in milk and mustard powder if using.
  6. Add shredded cheese gradually, stirring until melted and creamy.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy.

Notes

  • Use ground turkey for a lighter version.
  • Stir cheese in slowly to prevent clumping.
  • Leftovers thicken—add broth when reheating.
