Ingredients
- 1 lb ground beef (or ground turkey)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or beef broth
- 2 cups elbow macaroni (whole wheat optional)
- 2 cups shredded cheddar cheese (pepper jack optional)
- 1 can diced tomatoes, undrained
- 1 cup milk or half-and-half
- Salt and pepper, to taste
- Optional: 1 tsp mustard powder
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add onion and cook until softened. Stir in garlic and cook 30 seconds.
- Pour in broth and diced tomatoes. Bring to a boil.
- Add macaroni and cook until tender, about 8–10 minutes.
- Reduce heat to low. Stir in milk and mustard powder if using.
- Add shredded cheese gradually, stirring until melted and creamy.
- Season with salt and pepper to taste.
