Ingredients
- 1 cup uncooked white rice
- 2 cups water or chicken broth
- 1 lb ground beef or turkey
- 1 packet taco seasoning (about 1 oz)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup diced tomatoes (fresh or canned)
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- ½ cup salsa (for topping)
- 2 tablespoons olive oil
- To taste: salt and pepper
- Optional: fresh cilantro and lime wedges for garnish
Instructions
- Cook the rice in water or chicken broth according to package instructions.
- In a skillet, heat olive oil over medium heat. Add ground beef or turkey and cook until browned.
- Add taco seasoning and a splash of water, stir well, and cook for 2–3 minutes.
- Mix in black beans, corn, and diced tomatoes. Cook until heated through.
- Assemble bowls: layer rice, seasoned meat mixture, shredded lettuce, cheddar cheese, and salsa.
- Optional: garnish with fresh cilantro and lime wedges before serving.
