This Garlic Parmesan Chicken Meatloaf is tender, juicy, and bursting with flavor. Made with lean ground chicken, fresh garlic, and parmesan cheese, it’s the perfect comfort food for any night of the week.
Ingredients
- 1 lb lean ground chicken
- 3 cloves fresh garlic, minced
- 1/2 cup grated parmesan cheese
- 1/2 cup plain breadcrumbs
- 2 large eggs
- 1 small onion, finely chopped
- 1/4 cup ketchup (for topping)
- Salt and pepper to taste
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- In a large bowl, combine ground chicken, garlic, parmesan, breadcrumbs, eggs, chopped onion, salt, and pepper.
- Mix until just combined. Do not overmix.
- Shape the mixture into a loaf and place in a greased baking dish or loaf pan.
- Spread ketchup over the top as a glaze.
- Bake for 45โ50 minutes or until internal temperature reaches 165ยฐF (74ยฐC).
- Let rest 5โ10 minutes before slicing and serving.
Notes
- For extra moisture, add 2 tablespoons of milk or plain Greek yogurt to the mix.
- Use freshly grated parmesan for the best flavor.
