Mississippi Mud Cake is a rich, fudgy chocolate cake layered with gooey marshmallows and crunchy nuts. It’s a decadent dessert perfect for chocolate lovers and festive occasions.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 2 cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups mini marshmallows
- 1 cup pecans or walnuts, chopped (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, mix flour, cocoa powder, and baking powder.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Gradually add dry ingredients to wet ingredients and mix until combined.
- Pour batter into prepared pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean.
- Remove from oven and immediately sprinkle mini marshmallows and chopped nuts over the top.
- Return to oven for 5 more minutes or until marshmallows are puffed and lightly browned.
- Cool completely before slicing and serving.
Notes
- Use a good quality cocoa powder for richer chocolate flavor.
- Walnuts or pecans add a nice crunch but can be omitted.
- Serve with whipped cream or ice cream for extra indulgence.
