Description

Mississippi Mud Cake is a rich, fudgy chocolate cake layered with gooey marshmallows and crunchy nuts. It’s a decadent dessert perfect for chocolate lovers and festive occasions.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups mini marshmallows
  • 1 cup pecans or walnuts, chopped (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, mix flour, cocoa powder, and baking powder.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gradually add dry ingredients to wet ingredients and mix until combined.
  6. Pour batter into prepared pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean.
  8. Remove from oven and immediately sprinkle mini marshmallows and chopped nuts over the top.
  9. Return to oven for 5 more minutes or until marshmallows are puffed and lightly browned.
  10. Cool completely before slicing and serving.

Notes

  • Use a good quality cocoa powder for richer chocolate flavor.
  • Walnuts or pecans add a nice crunch but can be omitted.
  • Serve with whipped cream or ice cream for extra indulgence.
