This Easy Blueberry Cottage Cheese Breakfast Bake is a protein-packed, wholesome breakfast option. Creamy cottage cheese combines with eggs, oats, and fresh blueberries for a lightly sweet, soft, and satisfying morning bake. Perfect for meal prep or a nourishing weekend breakfast.


Ingredients

  • 2 cups low-fat cottage cheese (room temperature)
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup almond milk or milk of choice
  • 1 1/2 cups fresh or frozen blueberries
  • 1/4 cup chopped nuts (optional – almonds or walnuts)
  • 1 tablespoon chia seeds (optional)
  • Cooking spray or butter for greasing


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish with cooking spray or butter.
  2. In a large bowl, whisk together cottage cheese, eggs, honey or maple syrup, vanilla extract, cinnamon, and salt until smooth.
  3. Stir in rolled oats, almond milk, and optional chia seeds or nuts if using.
  4. Gently fold in blueberries.
  5. Pour the mixture into the prepared baking dish and smooth the top.
  6. Bake for 35-40 minutes, or until the center is set and lightly golden.
  7. Let cool for a few minutes before slicing and serving. Enjoy warm.

Notes

  • Use frozen blueberries straight from the freezer; no need to thaw.
