Ingredients
- 1 cup cottage cheese (low-fat or full-fat)
- 2 tbsp honey, maple syrup, or sweetener of choice
- 1 tsp pure vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1 scoop protein powder (optional, chocolate or vanilla)
- 2 tbsp chopped nuts or seeds
- Handful of mini chocolate chips (optional)
Instructions
- In a food processor or blender, combine cottage cheese, honey, vanilla extract, cocoa powder, and protein powder (if using). Blend until smooth and creamy.
- Transfer the mixture to a bowl and stir in chopped nuts or seeds and mini chocolate chips.
- Refrigerate for 20–30 minutes to firm up the batter slightly.
- Roll the mixture into small bite-sized balls using your hands or a small scoop.
- Store the bites in an airtight container in the fridge for up to 5 days or freeze for longer storage.
