Description

This One-Pan Bold Honey BBQ Chicken Rice is a sweet, smoky, and satisfying weeknight dinner made with tender chicken, fluffy rice, colorful vegetables, and a rich honey BBQ glaze. Ready in about 40 minutes with minimal cleanup.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ยฝ cup BBQ sauce
  • ยผ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ยฝ tsp smoked paprika
  • Salt and pepper to taste


Instructions

  1. Heat a large skillet over medium heat and cook the chicken until browned on both sides. Remove and set aside.
  2. In the same pan, add rice, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir for 1 minute.
  3. Add chicken broth, BBQ sauce, honey, and mixed vegetables. Stir well.
  4. Place chicken back into the pan, cover, and bring to a boil.
  5. Reduce heat and simmer for 20โ€“25 minutes, until rice is tender and liquid is absorbed.
  6. Let rest for 5 minutes before serving. Slice chicken and mix gently with rice.
