Description
This One-Pan Bold Honey BBQ Chicken Rice is a sweet, smoky, and satisfying weeknight dinner made with tender chicken, fluffy rice, colorful vegetables, and a rich honey BBQ glaze. Ready in about 40 minutes with minimal cleanup.
Ingredients
- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ยฝ cup BBQ sauce
- ยผ cup honey
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp garlic powder
- 1 tsp onion powder
- ยฝ tsp smoked paprika
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat and cook the chicken until browned on both sides. Remove and set aside.
- In the same pan, add rice, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir for 1 minute.
- Add chicken broth, BBQ sauce, honey, and mixed vegetables. Stir well.
- Place chicken back into the pan, cover, and bring to a boil.
- Reduce heat and simmer for 20โ25 minutes, until rice is tender and liquid is absorbed.
- Let rest for 5 minutes before serving. Slice chicken and mix gently with rice.
