Ingredients
- 1 tbsp olive oil
- 1 lb Italian sausage (mild or spicy, casing removed)
- 3 cloves garlic, minced
- ½ tsp red pepper flakes (optional, for a touch of heat)
- 3 cups chicken broth
- 1 cup heavy cream
- 12 oz penne pasta
- 2 cups fresh spinach, chopped
- ½ cup grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- Fresh parsley or basil, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add Italian sausage and cook until browned, breaking it apart with a spoon.
- Add garlic and red pepper flakes, cooking for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine.
- Add penne pasta, ensuring it is submerged in the liquid. Bring to a boil, then reduce heat and simmer uncovered for 12–15 minutes, stirring occasionally, until pasta is cooked and sauce thickens.
- Stir in chopped spinach and cook until wilted, about 2 minutes.
- Add Parmesan cheese, season with salt and black pepper to taste, and stir until creamy.
- Garnish with fresh parsley or basil before serving warm.
