Ingredients
- 4 thin chicken cutlets
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- ½ cup chicken broth
- 1 cup heavy cream
- ¼ cup grated Parmesan (for sauce)
- Salt & pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- Season chicken cutlets with salt and pepper.
- Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with ½ cup Parmesan.
- Dredge each cutlet in flour, dip in egg, then coat in breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and cook chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter and sauté garlic for 1 minute.
- Add chicken broth and simmer for 2–3 minutes.
- Stir in heavy cream and ¼ cup Parmesan. Simmer until sauce thickens.
- Return chicken to skillet and spoon sauce over the top. Garnish and serve warm.

- Use freshly grated Parmesan for best flavor and texture.
- Serve over pasta, rice, or mashed potatoes.
