Description

This Pesto Chicken Flatbread is an easy, flavorful dinner that combines tender chicken, fresh basil pesto, and melted cheeses on a crisp flatbread base. Perfect for weeknight dinners or casual entertaining!


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1 cup fresh basil pesto (store-bought or homemade)
  • 4 pieces of flatbread (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish (optional)


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. Season chicken breasts with salt and pepper. Cook in a skillet with olive oil until golden and cooked through (6โ€“8 minutes per side). Let rest and slice thinly.
  3. Place flatbreads on a baking sheet. Spread 2โ€“3 tablespoons of pesto on each flatbread.
  4. Top with sliced chicken, mozzarella cheese, cherry tomatoes, and Parmesan cheese.
  5. Bake in the preheated oven for 8โ€“10 minutes, until cheese is melted and bubbly.
  6. Garnish with fresh basil leaves, slice, and serve warm.
