Description
This Pesto Chicken Flatbread is an easy, flavorful dinner that combines tender chicken, fresh basil pesto, and melted cheeses on a crisp flatbread base. Perfect for weeknight dinners or casual entertaining!
Ingredients
- 2 large boneless, skinless chicken breasts
- 1 cup fresh basil pesto (store-bought or homemade)
- 4 pieces of flatbread (store-bought or homemade)
- 1 cup shredded mozzarella cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh basil leaves, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken breasts with salt and pepper. Cook in a skillet with olive oil until golden and cooked through (6–8 minutes per side). Let rest and slice thinly.
- Place flatbreads on a baking sheet. Spread 2–3 tablespoons of pesto on each flatbread.
- Top with sliced chicken, mozzarella cheese, cherry tomatoes, and Parmesan cheese.
- Bake in the preheated oven for 8–10 minutes, until cheese is melted and bubbly.
- Garnish with fresh basil leaves, slice, and serve warm.

- Use store-bought rotisserie chicken for a quicker version.
- Add a drizzle of balsamic glaze for extra flavor.
