Description

This Pesto Chicken Flatbread is an easy, flavorful dinner that combines tender chicken, fresh basil pesto, and melted cheeses on a crisp flatbread base. Perfect for weeknight dinners or casual entertaining!


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1 cup fresh basil pesto (store-bought or homemade)
  • 4 pieces of flatbread (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish (optional)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper. Cook in a skillet with olive oil until golden and cooked through (6–8 minutes per side). Let rest and slice thinly.
  3. Place flatbreads on a baking sheet. Spread 2–3 tablespoons of pesto on each flatbread.
  4. Top with sliced chicken, mozzarella cheese, cherry tomatoes, and Parmesan cheese.
  5. Bake in the preheated oven for 8–10 minutes, until cheese is melted and bubbly.
  6. Garnish with fresh basil leaves, slice, and serve warm.
